Bio:

Sebastian Nohse is a chef, restaurateur, and sustainability advocate of high repute, whose stellar career has spanned three decades and multiple continents.

A German national, Sebastian began his culinary journey in a small upscale restaurant in his hometown of Essen, where the dynamism of a meticulous four-chef kitchen ignited a deep passion for hospitality. He fell in love with the energy of the kitchen environment, and this seminal experience set the tone for his entire career—teaching him the importance of discipline, clarity, respect, and hard work, inspiring teams, and fostering a positive work culture.

Over the past 30 years, “Seb” has worked his way through the ranks—from leading roles in small independent restaurants to owning and operating his own concept, and later transitioning into strategic leadership positions within top-tier hospitality companies.

Prior to joining Hilton as Senior Director Culinary for Europe, the Middle East, and Africa in 2020, Sebastian led kitchen operations at the iconic Burj Al Arab Jumeirah and directed culinary strategy for large-scale operations such as the exquisite Mandarin Oriental Hong Kong, the legendary Fountainbleau Miami Beach, the expansive Madinat Jumeirah Resort, and the prolific JW Marriott Marquis Hotel Dubai.

In March 2025, Sebastian expanded his remit to include F&B Development, Openings, and Operations for the UK & Ireland, further strengthening Hilton’s Food & Drink leadership across the region.

Over the past six years, Sebastian has played a pivotal role in many impactful Hilton ESG initiatives, particularly in areas such as food waste reduction, local sourcing, and promoting diversity, equity, and inclusion in the workplace.
